Description

A creamy, no-bake keto cottage cheese cookie dough that tastes just like the real deal. Packed with protein, low carb, and ready in 10 minutes flat.


Ingredients

  • 1 1/4 cups cottage cheese (full-fat)
  • 2 tbsp sugar-free honey
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla extract
  • 1 1/3 cups almond flour (super-fine blanched)
  • 1/3 cup keto chocolate chips

Instructions

  1. Add the cottage cheese to a food processor or blender and pulse until completely smooth with no curds left.
  2. Pour the blended cottage cheese into a mixing bowl.
  3. Add the sugar-free honey, vanilla protein powder, vanilla extract, and almond flour.
  4. Stir everything together until you get a thick, doughy consistency.
  5. Add the keto chocolate chips and gently fold them through with a spatula.
  6. Serve right away with a spoon, or chill in the fridge for 20 minutes for a firmer scoopable texture.

Notes

Make sure to blend the cottage cheese until perfectly smooth, lumps will ruin the texture. If your dough turns out runny, drain the cottage cheese in a fine mesh strainer before blending and spoon-and-level your almond flour.
