Description

A creamy, no-bake cottage cheese cookie dough without protein powder, ready in 10 minutes with simple ingredients and packed with natural protein.


Ingredients

  • 1 pound cottage cheese (full-fat works best)
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 2 1/2 cups almond flour
  • 1 cup chocolate chips (mini chips preferred)
  • 1 pinch of salt

Instructions

  1. Add cottage cheese, maple syrup, and vanilla extract to a food processor.
  2. Blend for 60 to 90 seconds, scraping down the sides once or twice, until completely smooth with zero lumps.
  3. Pour the blended cottage cheese mixture into a medium bowl.
  4. Add the almond flour and a pinch of salt.
  5. Stir together with a spoon until everything is fully combined and dough-like.
  6. Add the chocolate chips and gently fold them through the dough.
  7. Sprinkle a few extra chocolate chips on top for a bakery-style finish.
  8. Grab a spoon and dig in immediately, or chill in the fridge for 15 minutes for the best texture.
