Description

A quick no-bake cottage cheese cookie dough with oat flour, packed with protein and ready in 10 minutes. Kid-approved, refined sugar-free, and tastes like a real treat instead of a sad health food substitute.


Ingredients

  • 1 cup cottage cheese (full-fat works best for creaminess)
  • 2 tablespoons creamy peanut butter
  • 1 to 2 tablespoons maple syrup
  • 1/2 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • Flaky sea salt for topping (optional)

Instructions

  1. Toss the cottage cheese, peanut butter, and maple syrup into a high-speed blender.
  2. Blend on high until everything looks smooth and creamy.
  3. Pour the blended mixture into a medium mixing bowl.
  4. Add the oat flour, protein powder, and vanilla extract to the bowl.
  5. Stir well until you have a thick cookie dough texture.
  6. If too runny, sprinkle in more oat flour a tablespoon at a time.
  7. If too thick, add a splash of milk to loosen it up.
  8. Gently fold the chocolate chips into the dough until evenly spread out.
  9. Serve right away or chill in the fridge for 30 minutes for a firmer texture.
  10. Sprinkle a little flaky sea salt on top before serving.

Notes

Use full-fat or 4% cottage cheese for the creamiest texture. Don't overmix when folding in chocolate chips. Store in an airtight container in the fridge for up to 5 days, or freeze rolled into balls for up to 2 months.
